The best I can think of right now (although, I could probably come up with plenty, plenty more) are:-

*Hard-Boiled: Where Anthony Wong gets it through the eye.

*The Quick & The Dead: The Red Indian (I think) who you see from behind. This big bit flies off the back of his head and you can see the guy who shot him through the hole.

God of Gamblers: The guy who does a backflip in the carpark fight and scores a beautiful hit across his opponent's temple.

Also (plug, plug, plug), my movie, The Revenge of One-Eyed Jon. We were testing the squib thing one this site and the guy is shot in the chest with a Beretta. We filled the tube a bit too full and it looks like a grenade goes off in his heart.

I like the shot in Snatch when they are talking about a couple of hard men...

The scene is where a bloke puts a gun to his head, then the camera pulls away to a wall...
A few seconds later we see the remains of this guys head splatter over the wall!

This is gonna sound wierd, but my favorite is from "American Beauty" where Kevin Spacey gets shot and all you see is the gun coming up behind him and then the splatter on the wall. I especially like the contrast of colors in that scene.

The scene in Robocop where Murphy gets his hand blown off by the gang in that old building. I saw that a a young tender age of about 5 years old. And then of course the other hits he takes straight after that.
